This new Braai Buddy 2 is a compilation of international recipes that have modified and adapted for South African tastes and styles of cooking.

In keeping with the previous book, De Waal Davis and Colin Daniel have kept it simple and humorous. Tastes and cooking trends have evolved since the previous book was published so, in keeping with the times, I have added sections on gas cooking, the pros and cons of wood versus gas, lassic 'steakhouse' sauces and a steak chapter, among others. The potjiekos chapter avoids the traditional dishes (covered in my previous book) and offers recipes from Europe, the Mediterranean, North Africa, America and South Africa. There are also 'fixed' beef, chicken, lamb and pork recipes for those who don't wish to experiment with marinades, bastes and sauces. Many bottled BBQ sauces and condiments are available in supermarkets today and I have catered for this trend as well, the difference being that the sauces and condiments in this book are made mostly from natural ingredients wherever possible. Where some of the ingredients are store bought, I have tried to steer clear of those containing the dreaded MSG. Many of the recipes have a description of the dish and Cook's Tips where applicable. For lovers of rare and medium rare red meats, there is a Fingertip Test to determine the doneness of the meat. Several recipes do state the cooking duration, e.g. 'cook for 3 minutes a side', but I prefer to go by touch rather than time. Get into the habit and you'll never accidentally end up with a well-done steak again. As is my custom, I have once again added a controversial guest list, for which I take full responsibility; so much so that I have stocked up with bulletproof vests and will keep a braai fork, tips dipped in concentrated Habanero chillies, strapped to my leg for protection. I am currently working on a Tabasco spray, but I prefer to save it for my food rather than my 'would be' assailant's eyes. […]
