Example: Recipe for Pampoenkoekies

500 ml cooked pumpkin, mashed
10 ml baking powder
100 ml cake flour
2,5 ml salt
60 ml sugar mixed with
5 ml ground cinnamon
1 egg
Oil for shallow frying

Mix together pumpkin, flour, baking powder and salt. Beat egg and add to pumpking mixture to form a batter of dropping consistency. Heat oil in a pan and drop dessert-spoonfulls of batter in to the pan. Fry until golden brown on both sides. Place on kitchen towel to get rid of excess oil. Layer in serving dish sprinkled with the cinnamon sugar. Freezes very well.
